Vegan Black Eyed Peas and Good Luck Traditions

Beginning 2019 with one of my favorite traditions. A good luck meal of Black Eyed Peas and rice. We normally have some kind of greens with this meal but today was all about those peas!

Many people cook their New Years Day peas with ham hocks and or bacon. However, in our family we rarely have meat in our house. The boys do eat meat outside of our home but, I would like for us to get closer to being a completely plant based family this year 🤞. As of now we just do our best. Im still really proud of our little fruit and veggie eaters.

Vegan Black Eyed Peas

  • Prep time: 15 minutes
  • Total cook time: 4 hours

We used fresh-precooked peas but you could easily adjust the liquid and time if you did not have these available to you.

*For dry peas add at least 2 cups of liquid but watch them in the last hour and add more as needed.

*For canned peas use 2 cups less liquid and cook for 2 hours as opposed to 4 hours.

Ingredients

  • 1 onion diced
  • 1 tbsp sunflower oil
  • 2 stalks celery diced
  • 1 carrot diced
  • 1 tsp garlic powder
  • 4 cups Black Eyed Peas
  • 1 tsp salt
  • 6 cups veggie broth (We use water amd Rapunzel broth cubes- 3 cubes make 6 cups)
  • 1 tsp Old Bay seasoning
  • 2 bay leaves
  • Salt and pepper to taste

Begin by sauteing the onion, celery, and carrot until slightly softened, about 5 minutes on medium heat. In the last minute add the garlic powder and Old Bay. Add remaining ingredients and bring to a quick boil. Once the peas are boiling turn the heat down to your lowest setting possible, cover, and cook for 3 1/2 hours. Check a few times to make sure peas aren’t sticking and stir. Uncover pot and continue to cook uncovered for 30 more minutes. Once finished test for salt and pepper and add if needed. Serve over a bowl of rice and some yummy hot sauce (We almost always go for the Crystals) ENJOY!!

Intentions for 2019

Looking back on 2018

This past year has been filled with joy and laughter, fun and tons of goal setting. We have been blessed with so much love in our family.

This isnt to say that we havent had our own struggles. On the daily. It’s just to remember that even with the struggles we face, the love is something that we’ll never be with out.

Jumpin into 2019 with both feet in the air

In 2019, I hope to continue making personal growth. Focussing a majority of my energy on self-love. I want to keep growing a deeper understanding of positive parenting and calm my voice with my children. Doing all things with intention. In our home I would like to be more organized with our daily jobs amd keeping our home cleaner.

I would like to use this platform to keep up with what we are doing in our daily lives and keep myself accountable.

Big Daddy

  • Have 3 incomes: Daily career, Custom Rod building with Lake Istokpoga Company, and side boat work.
  • Fence our property (watch our projects as they grow on YouTube: Lake Istokpoga Co.)

Jax

  • Remember daily to take dogs out in the afternoon for Dad
  • Spend at least 1.5 hours outside playing each week

Parker

  • Follow directions the first time Mom and Dad say it
  • Be nicer to my brothers and Mom and Dad

Cole

  • Take pictures of myself
  • Play with balls and animals to be more happy

We are off today to look at some adorable Pygmy Goats and finally make our way to Busch Gardens Christmas Town!
